During the lingering heat of summer and the beginning of autumn, eat purple foods as much as possible. That’s what I was taught in Kyoto. So, as autumn and winter approach, eat lots of purple foods and purify yourself of the “unnecessary” things you’ve been tired of over the summer.

“Learning about greenery” Our manufacturing base (workshop) is located in the heart of Kyoto. Every day is like a lesson, I’m learning green (Japanese basics).
“Matcha history” The first factory manager is in his 38th year, and the second factory manager is in his 18th year. There is no goal in the pursuit of matcha ice cream.
“With the feeling of making it” We make 5 or 10 liters, so we don’t use a bamboo tea whisk…but we put more strain on our mixer (our partner) than any other ice cream. The “trick” to making it delicious is the mixing time, which goes far beyond your imagination. We will be dealing with a uniform particle size of 8 microns…That is, we will do our best to bring out the flavor!
