私達の姉妹店である
京都嵐山のカフェスタイルリゾート嵯峨野湯は、
2026年8月10日（ハートの日）に、
お陰様で、２０周年を迎えます。
幸運にも大正時代の銭湯の跡地に、ご縁を戴き、
あれから20年、あっという間の月日でした。
地元の皆様方、観光でお越しの方、関係者の皆様、
改めて、深く感謝を申し上げます。
本当に、本当に、有難うございます。
引き続き、「地方再守」皆んなで守り続けます！
Our sister establishment,
Sagano-yu, a cafe-style resort in Arashiyama,
Kyoto, will be celebrating its 20th anniversary
on August 10th, 2026 (Heart Day).
We were fortunate enough to be given the
opportunity to operate on the site of a public
bathhouse built during the Taisho era,
and 20 years have passed in the blink of an eye.
Above all, we have nothing but gratitude for our
customers, the local community,
and everyone involved.
Thank you so, so much.We will continue to protect
and pass on this legacy together.

新年度を向かえるなか、
私達、お弁当作りも、日本の食文化を振り返り、
初心（リスタート）の気持ち、季節でもあります。
禅に、三徳六味という言葉があります。
日本の六味とは、苦味、酸味、甘味、辛味、塩味、淡味です。
インドでは、苦味、酸味、甘味、辛味、塩味、渋味となり、
日本食では、ココの苦味と渋味が一つにまとまり、
そこに、日本文化では重要となる「淡味」が加わりました。
この淡味というのは、食材自身の本来持つ旨味、そのもので、
所謂、生成の味を最大限に引き出す為の淡い味という意です。
この生成の味を巧みに引き出すのが、和食の特徴です。
食材そのものと自分の味覚（心）が共鳴した瞬間に、
本当の美しさ、美味しさが生まれてきます。
日本人は、素材そのものの味を非常に敏感に感じとり、味わう
ことができる卓越した舌（味覚）を持っています。
淡味は、日本人の繊細な舌にあった美しい味、そのものです。
美味しいとは：美しい味と書きます。
この新春に合わせつつ、私達も、この美しい味を求め・・・
働く皆様に、少しでも奥深い淡味を届けるよう努力します。
話を戻し、以下、三徳が加わり、調理する心が融合します。
経輭（きょうなん）：軽くあっさりと柔らかさが込められる事
浄潔（じょうけつ）：清らかで穢れがなく愛に溢れている事
如法作（にょほうさ）：天意に叶った調理がなされている事
先人の教えは、
この三徳と六味が揃って始めて、調理が完成すると言います。
この季節、初心に振り返り、「氣」を引き締め、
春からのお弁当作りに、頑張って行こうーっとなるのです。
私達、ジャパベンの大切な心得でもあります。

A custom to remember our love
Every year, at Japaben, both in Shiodome and Otemachi,
we offer “Ohagi and Warm Noodles” to coincide with the spring equinox.
